Mince pies are a yuletide tradition with their buttery pastry, fruit filling and warming spices. They make for a perfect winter treat to be savoured in the afternoon, or if you’re hosting a small get together with friends and family, serve warm and topped with thick cream for dessert.
Homemade mince pies are relatively easy to make and are a great way to get into the festive spirit. Discover our mince pie recipe below.
Bake in a muffin tray
Serves 16
Time 1 hour
Ingredients
600g mincemeat, jarred
1 orange, finely zested
1 lemon, finely zested
2 tbsp brand, optional
Icing sugar, for dusting
For the pastry
375g plain flour
125g caster sugar, plus extra for sprinkling
260g unsalted butter, softened
1 large egg
1 beaten egg, for glazing l
Brie and Cranberry Parcels
Method
1. Place the plain flour and softened butter in a mixing bowl and rub together until you reach a crumb consistency. Avoid overworking the mixture.
2. Add 125g caster sugar and 1 large beaten egg. Mix together.
3. Tip out the dough onto a lightly floured surface and fold until the pastry comes together. Wrap the pastry in cling film and chill for 10 minutes.
4. Add the jar of mincemeat into a bowl and mix in the lemon and orange zest as well as the brandy.
5. Pre heat the oven to 220C / 200C fan / gas 7.
6. Roll out the pastry to approximately 3mm thick. Using a road cutter, cut out the bases and place them into greased muffin trays. Add the mincemeat mixture into each cup, brush the edge of each pie with a beaten egg.
7. Re-roll the pastry and cut out lid or stars and press them onto the top of the mince pies. Once again, glaze with the beaten egg and sprinkle with the extra caster sugar. Mince pies with lids require a small cut in the top so the steam can escape, whereas those with stars do not.
8. Bake for 15-20 minutes until golden brown. Leave to cool in the muffin tray before removing and dust with icing sugar before serving.
