Easy

Take your leftover potatoes and root vegetables and put them to good use with our air fryer bubble and squeak recipe. The perfect dish for Boxing Day.

This recipe is super simple and only takes 20 mins. It's a great way to reuse any leftovers from your Christmas Day lunch. Simply mash together potatoes and veg, shape into patties and fry. Serve with lashings of gravy and any other leftovers.

What you'll need...

  • 320g leftover roast potatoes
  • 300g leftover cooked vegetables like carrots, turnips, swede, parsnips, Brussels sprouts, etc.
  • Handful of rosemary or thyme
  • Olive oil
  • Salt and pepper, to taste

Method

  1. Place the veggies in a large bowl and mash. Avoid over-mashing, so the patties keep their shape and still have texture. Using your hands, shape the mashed vegetables into 6 evenly shaped patties. 

  2. Arrange the patties in the air fryer in a single layer, avoiding about overlap. Cook at 190C for 15 minutes. For the final 5 minutes, sprinkle salt and pepper, and scatter over the herbs with a drizzle of oil. 

  3. Remove using a slotted turner and serve warm, alongside leftover turkey meat, wellington and fresh gravy. You may even wish to tuck into bubble and squeak for breakfast, simply top with a fried egg.
