A delicious accompaniment to many dishes, customise with your favourite vegetables.

Whether you want a mix of courgette, peppers and red onion or a selection of root vegetables to sit alongside your roast dinner, air fryer roasted vegetables is a simple yet flavourful side dish that can be enjoyed all year long. Make it extra delicious by using seasonal produce.

What you'll need...

  • 1 carrot
  • ½ red pepper
  • ½ yellow pepper
  • 1 courgette
  • 1 red onion
  • 1 garlic clove, sliced
  • ½ tsp dried rosemary
  • ½ dried thyme
  • ½ tsp sea salt
  • 1 tbsp olive oil
  • Fresh black pepper, to taste

Method

  1. Cut the carrot, peppers, courgette and red onion into uniform chunks of similar sizing and slice the garlic clove. Place the pieces into a mixing bowl. 

  2. Drizzle the olive oil and add the salt, rosemary, thyme and black pepper. Toss until the vegetables are evenly covered. 

  3. Add the coated vegetables to your air fryer. Try and avoid overlapping. 

  1. Cook at 200C for 15 minutes, or until the vegetables are roasted and tender. If you prefer your vegetables to be extra ‘roasted,’ leave them in for an extra 5 minutes. 

  2. Remove from the air fryer and serve alongside the main meal.
