This soup is made from tomatoes, onion and garlic that have been roasted in an air fryer and then blitzed together to make a creamy, homemade tomato soup.
Due to ease and quickness, our air fryer tomato soup recipe can be ready in 30 minutes or less, making it ideal for a healthy lunch or dinner. Serve with warm bread, or if you’re feeling extra indulgent, pair with a gooey cheese toastie.
What you'll need...
- 6 tomatoes, halved
- 1 white onion, quartered
- 4 cloves garlic, peeled
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 1 tsp granulated sugar
- Handful fresh basil, chopped
- 375ml vegetable stock
- 60ml heavy cream
- Parmesan cheese, grated (use vegetarian Parmesan to make it veggie)
- Salt and pepper to taste
Method
Preheat the air fryer to 200C. Line the basket with parchment paper or use a silicone basket.
Add the tomatoes, onion and garlic, drizzling with olive oil. Sprinkle salt, pepper and sugar.
Air fry for 30 minutes or until the vegetables have softened. Once cooled, peel the tomatoes and remove any stems or tough bits.
Add the air fried vegetables and basil to the food processor and pulse on high until smooth. Pour the blended vegetables into a saucepan and add the vegetable stock, heavy cream and Parmesan cheese. Stir until it heats through.
Pour into bowls and serve hot with extra cheese and basil if desired. Salt and pepper to taste.
