This salad dish is not only simple but full of flavour, making it a great dish to serve to friends and family when entertaining. Ideal for the warmer days when you want to enjoy a leisurely lunch or dinner.

What you'll need...

For the salad
  • 1 whole head of broccoli
  • 2 cooked chicken breasts
  • 200g small pasta shapes, cooked and cooled
  • Pomegranate seeds, to decorate
For the dressing
  • 75g mayonnaise
  • 100g soured cream
  • 100g crème fraiche or yogurt
  • 150g crumbled stilton
  • 2-3 chopped spring onions
  • Handful flat leaf parsley
  • Juice of 1 lemon
  • Salt and pepper to taste

Method

  1. Cut the head of the broccoli and dice the florets and tender stems to roughly equal size pieces. Remove the bottom of the main stem and peel the tough outer skin. Dice the tender centre of the stem and steam this with the other parts of the florets – try to keep this on the al dente side for a little extra bite.

  2. To make the dressing, combine all the ingredients in a food processor and blend until smooth. Adjust the lemon juice and seasoning to taste.

  3. In a large bowl, add the cooked pasta and broccoli. Dice the chicken and add this as well. Stir through enough dressing to coat everything – remember to store any leftover dressing for next time.

  4. Scatter over the pomegranate seeds for decoration and serve as part of a summery lunch, or as a side dish.
