Take succulent smoked salmon and turn it into a creamy pasta dish. Ready in less than half an hour, this is an unforgettable, tasty mid-week meal.
Our creamy smoked salmon pasta dish is simple and can be easily customised with your favourite choice of salmon and veggies. Cook smoked salmon fillets and flake them into the dish or use a pack of pre-cooked salmon slices – both methods are delicious!
What you'll need...
- 350g pasta of your choice
- 3 garlic cloves, finely sliced
- 1 tbsp olive oil
- 5 tbsp crème fraiche
- 1 pack smoked salmon, torn into strips
- 60g frozen peas
- 1 courgette, sliced
- 1 red chilli, finely chopped and deseeded
- ½ lemon, juice and zested (optional)
- Handful fresh chives or dill, finely chopped
- Handful rocket, to serve
Method
Bring a pan of salted water to the boil and cook the pasta 2 mins less than recommended.
Meanwhile, heat the olive oil in a large frying or sauté pan over a medium heat. Add the courgette, red chilli and garlic and cook until softened. Stir in the crème fraiche along with the lemon juice, frozen peas and 2 ladles of pasta cooking water. Allow to gently simmer for 1-2 mins.
Drain the pasta and mix into the sauce and vegetables. Cook to slightly reduce the creamy sauce, so it coats the pasta.
Turn the salmon into strips and stir through the pasta mix along with the chives or dill. Season with salt and pepper before dividing into bowls and serving with a handful of rocket and lemon zest if you wish.
