These dairy free pancakes are made with soya milk and yoghurt, so they’re deliciously light and fluffy.

A great alternative to those who are lactose intolerant, or if you’re simply cutting down on dairy. Top with your favourite fruit and syrups, or if you’re not a fan of soya, feel free to use oat, coconut or almond alternatives instead.

What you'll need...

  • 250g plain flour
  • 65g golden caster sugar
  • 2 tsp baking powder
  • 250ml soya milk, chilled (or oat, coconut or almond)
  • 3 tbsp soya yoghurt (or oat, coconut or almond)
  • 1 egg
  • 3 tbsp sunflower oil

Method

  1. Sift the flour and baking powder into a large mixing bowl and add the sugar and a pinch of salt. Mix in the soya milk, yoghurt, egg and 2 tbsp of the oil. Whisk until you achieve a smooth batter. 

  2. Heat a medium-sized frying pan or pancake pan with some oil until hot. Add a ladleful of batter and cook for one minute until golden. Flip and cook the other side. Place on a plate and keep warm in the oven (at a low temperature). 

  3. Once all pancakes are cooked, serve with chopped banana and maple syrup (or your favourite toppings!)
