Easy

This easy, no bake dessert is a classic for a reason. Made with fresh strawberries, whipped cream and meringue, we also added raspberries for some extra goodness.

An Eton mess is a beloved dessert – and it’s easy to make too. No bake makes it ideal for the summer months when turning on ovens seems like an extra hassle, plus the freshness of the fruit and strawberry sauce makes this a winning combination. Our Eton mess recipe is best served and enjoyed alfresco.

What you'll need...

  • 500g strawberries, hulled and chopped, fresh plus extra for serving
  • 125g raspberries, fresh plus extra for serving
  • 1 ½ tbsp sugar, caster or granulated is fine
  • 360ml full fat heavy cream
  • 70g shop bought meringues

Method

  1. Place the hulled and chopped strawberries in a large mixing bowl and add the raspberries. Sprinkle over sugar and stir until the fruit is evenly coated. Set aside. 

  2. Take some extra strawberries and blitz in a blender to make a strawberry sauce. Set aside until later. 

  3. In a separate bowl, whip the cream using an electric hand mixer until soft peaks form.  

  1. Crush meringues with your hands. Make sure you have large enough chunks, avoiding making the meringue too fine.  

  2. In a large serving bowl, add the chopped strawberries and raspberries, crushed meringue, and whipped cream. Gently fold together. 

  3. Drizzle the strawberry sauce over the Eton mess and serve, spooning into individual bowls and topping with extra strawberries and raspberries.
