Smash your potatoes for an unbelievably crisp yet tender and buttery centre. Our garlic herb smashed potatoes are the perfect side dish and can be enjoyed all year long.

We’ve kept our smashed new potatoes simple with butter, plenty of garlic and flat parsley, but feel free to adapt the recipe how you desire. Why not add a drizzle of chilli oil for some slight spice or top with crumbled feta if you’re craving something cheesy? Serve our garlic smashed new potatoes alongside a roast dinner, summer salads, burgers or enjoy on their own with a dipping sauce.

What you'll need...

  • 750g new potatoes
  • Light olive oil
  • 150g unsalted butter
  • 1-2 garlic cloves, crushed or finely chopped
  • Handful of fresh, flat parsley, roughly chopped
  • Salt and pepper, to taste

Method

  1. Par boil the potatoes in a large pot of boiling salted water until they are knife tender. 

  2. Preheat the oven to 200C / 180C fan / gas mark 6. 

  3. Drain the potatoes and allow them to steam dry for a few minutes. Drizzle the potatoes with a little oil and gently tip them into a roasting tin. Make sure the potatoes are evenly spread so there’s room to smash them. 

  4. Using the underside of a tumbler or mug, gently press down on each potato until they burst out of their skins and flatten slightly. 

  1. Sprinkle with salt and pepper and roast for 30 minutes, turning them halfway. 

  2. While the potatoes are cooking, melt the butter in a small saucepan and add the garlic. Cook on a low heat for 10 mins. Stir through the parsley and set aside. 

  3. 10 mins before being fully roasted, remove the roasting tin and pour the garlic mix over the potatoes and toss to ensure they’re fully coated. Finish roasting and serve immediately with another sprinkle of fresh herbs.
