Our gingerbread biscuits recipe is super easy and great fun to bake with children. You may even wish to gift a loved one with a batch of these homemade treats!
Chewy and crunchy, decorate these gingerbread men with icing to really bring them to life this festive season.
What you'll need...
- 375g plain flour
- 1 tsp bicarbonate of soda
- 3 tsp ground ginger
- 1 tsp ground cinnamon
- 120g unsalted butter, cold and cubed
- 175g light brown sugar
- 5 tbsp golden syrup
- 1 egg
Method
Preheat your oven to 190C / 180C Fan. Line baking trays with parchment paper (you may have to batch bake if you don’t have multiple trays).
Add the flour, bicarbonate of soda, ginger and cinnamon to a bowl. Add the butter and rub together with your fingertips until it resembles breadcrumbs. Alternatively, use a food processor and pulse until it’s breadcrumbs.
Mix in the sugar until combined. Add in the golden sugar and egg and beat until it forms a smooth dough.
Knead the dough and roll it out onto a floured surface. Aim for 1/2cm thickness.
Take your cookie cutter and cut out the shapes. We love making gingerbread men and stars! Place them on the lined baking trays and bake for 10 minutes. Remove and leave to cool. If you have more cookies to bake, repeat.
Once they’re fully cooled, decorate them!
