Elevate your pasta dishes, veggies and salads with gremolata, a mixture of herbs, garlic, lemon juice and citrus zest.
Our gremolata recipe is easy to make and utterly delicious, packed full of fresh ingredients that’ll add depth to fish, meat, roasted veg and salads. It’s perfect for those long, summer evenings and alfresco dining. You can make this Italian condiment and store it in the fridge, so it’s at hand whenever a dish calls for it.
What you'll need...
- Small bunch of flat leaf parsley
- Small bunch of mint
- 2 garlic cloves
- 1 lemon, zested
- Lemon juice to taste
- 2 tbsp extra virgin olive oil
- Salt and pepper
Method
Add some salt and the garlic to a pestle and mortar and crush to a smooth paste – the abrasive salt will help this process along.
Add the leaves of the parsley and mint to the garlic and crush until they have broken down into a paste – you can also use a food processor.
Add the oil and a squeeze of lemon and continue crushing together, adding more if necessary. Crush in the lemon zest. Lastly, season to taste and store for a week in the fridge.
Serve over cooked meats and veg, or as a salad dressing.
