Add plenty of vegetables and garlic to rice and fry with egg to make this healthy egg fried rice.
This vegetable fried rice recipe is a simple dish that requires a box of eggs, packet of rice, your favourite veggies and seasoning. Serve as it is for a quick mid-week meal when you’re short on time.
What you'll need...
- 300g long-grain rice
- 3 tbsp vegetable oil
- 500g frozen veg mix
- 1 onion, finely chopped
- 2 spring onions, chopped
- 2 garlic cloves, crushed
- 1 small piece of ginger, peeled and grated
- 4 eggs, beaten
- 3 tbsp soy sauce
Method
Boil the rice in a large saucepan or rice cooker for 10 mins until tender. Tip into a sieve and rinse with cold water before pouring out onto a large plate and leaving to cool.
Heat 1 tsp of oil in a large frying pan or wok over a medium high heat and fry the onion until softened. Add the remaining oil and toss in the frozen veg mix and cook for 10 mins until defrosted.
Add the spring onions, cooked rice, garlic and ginger to the wok or pan. Fry and combine for 10 mins until it’s hot and starting to crisp and brown.
Season the beaten eggs with pepper and move the rice and veg mix to the side of the pan. If you wish, add a further 1 tbsp of oil to the empty side and pour in the eggs. Cook, stirring the eggs constantly until the eggs are cooked through. Mix the eggs with the veg and rice, add the soy sauce then serve.
