What you'll need...

  • 1kg strong white bread flour or Tipo ‘00’ flour
  • 200g finely ground semolina flour
  • 2 tsp fine sea salt
  • 14g of dried yeast (we use 2 x 7g sachets of dried yeast)
  • 4 tbsp extra virgin olive oil
  • 1 tbsp golden caster sugar
  • 650ml lukewarm water

Method

  1. Sieve the flour onto a clean kitchen work surface and sprinkle the salt on top. Make a well in the middle.

  2. Pour 650ml of lukewarm water into a jug and add the yeast, oil and sugar. Mix until combined and leave to cool for a few minutes. Carefully pour the water mixture into the well.

  3. Using a fork, start to gradually bring in the flour from the sides of the well and mix into the liquid centre. Keep mixing, bringing in the flour until it comes together. Once the flour and liquid are mixed, work the dough with your clean, lightly flour-dusted hands. Knead until the dough is smooth and springy.

  4. Once kneaded, place the ball of dough into a large, flour-dusted bowl and sprinkle flour on top. Cover the bowl with a damp cloth and place in a warm room for an hour or until the dough has doubled in size.

  1. Remove the dough from the bowl and place on a flour-dusted work surface. Knead it to push the air out. You can either use the dough immediately or wrap it in clingfilm and store in the fridge for a day or freeze until required.

  2. If using straight away, divide the dough into individual balls – you can make 6 to 8 with our mixture. Roll out the pizza dough and top with sauce and your chosen toppings! Avoid leaving the dough out for too long – we recommend topping them immediately and cooking.

  3. Depending on toppings, your pizzas will typically cook in 10-14 mins at 240C / 220C Fan / gas mark 8, or until the crust is golden brown.
