Serve up leftover turkey curry and impress your guests this Boxing Day with a tasty way to use your Christmas Day leftovers.
Rather than let food go to waste, we've created this delicious turkey curry recipe that’s super easy to prepare on cook, so you have time to recover from the day before. Pair with perfectly cooked rice, naan bread, and enjoy something a little spicy this festive season.
What you'll need...
- 300g leftover turkey (cut into strips or chunks)
- 3 tbsp vegetable oil (or ghee)
- 1 tsp cumin seeds
- ½ tsp mustard seeds
- 1 green chilli, finely sliced (deseeded if preferred)
- 2 medium onions, thinly sliced
- 3 small garlic cloves, crushed
- 1 tsp salt
- ¼ tsp ground turmeric
- ½-1 tsp chilli powder (or paprika for a milder flavour)
- 1 tsp coriander powder
- ½ ginger powder
- 3 medium tomatoes, roughly chopped
- 1 large pepper, sliced
- Handful of chopped coriander to serve
Method
Heat the oil on a medium heat and add the mustard seeds. Once the mustard seeds start to splutter, stir in the cumin and green chilli and sauté until the cumin starts to turn a darker shade of brown.
Stir in the onions and garlic, frying until softened and the onions start to take a little colour. Add all the dry spices and stir for a few minutes.
Add the tomatoes, stirring for a minute before adding the pepper. Mix well. Turn the heat to low and place a lid for a few minutes, letting the peppers start to soften and the tomatoes break down.
Stir in the turkey pieces and mix well. Remove the pan from the heat and let the turkey sit with all the flavours, allowing everything to heat through fully. Add a little water to the pan if it looks a bit dry and sprinkle with coriander before serving. Serve with your favourite rice, naan bread and mango chutney.
