Easy

Full of antioxidants, fibre and plant protein, this matcha chia pudding recipe is a low-carb alternative for breakfast or a snack.

Made from 4 ingredients, all you need is matcha green tea powder, non-dairy milk, chia seeds and a dash of maple syrup. Choose your own toppings, but we love flaked almonds and strawberries.

What you'll need...

  • 2 tsp matcha green tea powder
  • ½ tbsp maple syrup
  • 230ml plant-based milk, your choice
  • 60g chia seeds
  • Flaked almonds, for the topping
  • 1 banana, chopped
  • Handful of blueberries

Method

  1. Take a large mixing bowl and mix the matcha green tea powder with the plant milk and mix until smooth. 

  2. Add the chia seeds and maple syrup. Make sure there are no clumps of chia seeds by stirring the mixture. Once the ingredients are combined evenly, place in the fridge for 2 hours or overnight. 

  3. Remove and top with sliced banana, blueberries and flaked almonds. Feel free to choose your favourite toppings: granola is also a tasty option!
