Our rocky road makes for a delicious, bite sized treat. Made with marshmallows, digestive biscuits and plenty of chocolate, this traybake treat can be enjoyed on its own or with a cuppa.

Quick and easy, this rocky road recipe is simple to whip up and serve to friends and family. They also make for a great addition to any bake sale or gift to a loved one. Add your own ingredients like dried fruit, honeycomb and more to tailor it to your exact tastes.

What you'll need...

  • 200g digestive biscuits
  • 130g butter
  • 2 tbsp golden syrup
  • 200g dark chocolate
  • Icing sugar, to dust
  • 100g raisins, optional
  • 100g dried fruit, optional
  • 80g honeycomb, broken into pieces, optional

Method

  1. Grease and line a square tin with baking paper. 

  2. Place the digestive biscuits into a freezer bag, seal and bash with a rolling pin until they’re broken – avoid bashing too hard and turning them into dust. Set aside until later. 

  3. Add water to a saucepan and boil the water. Create a bain-marie by placing a heatproof glass bowl on top and melt the butter, dark chocolate and golden syrup over a gentle heat, constantly stirring to avoid curdling and lumps. Once smooth, remove from the heat and allow to cool. 

  1. Take the digestive biscuits, marshmallows and any additional ingredients and stir into the chocolate mixture and gently stir until everything is evenly covered. 

  2. Pour the mixture into the lined baking tray and spread until it’s an even level and reaches the corners. Chill for at least 2 hours. Dust with icing sugar if you desire and cut into 12 even pieces.
