Savoury Pancakes with Ham and Cheese

Take the crepe and stuff it with oozing cheese and plenty of cooked ham for a deliciously quick and indulgent midweek meal. Can be enjoyed whether it's Pancake Day or not.
Our savoury pancakes recipe is quick, easy and full to the brim with the classic pairing of ham and cheese. We’ve stuffed our savoury crepes with salty gruyere, but feel free to use your favourite cheese. For a vegetarian option, swap out the ham for a veggie alternative.
What you'll need...
- 75g plain flour
- 150ml your milk of choice
- 1 egg
- Oil, for frying
- 8 tbsp crème fraiche
- 200g gruyere, grated (or your favourite cheese)
- 250g cooked ham, sliced and fat removed
- 2 tbsp Dijon mustard
Method
Put the flour into a bowl with a pinch of salt and make a small well in the centre. In a second bowl, whisk together the milk and eggs, then gradually add and whisk into the flour. Avoid over whisking but ensure the that the batter is smooth and not too thick or runny. If it’s too thick, add a splash more milk, and if it’s too runny, add a sprinkling of flour.
Heat a pancake pan or frying pan and brush lightly with oil. Ladle the batter into the pan, swirling the mix so it thinly coats the bottom of the pan. Cook until the crepe starts to golden. Flip and cook the other side. Repeat until all the crepes are made.
Heat a large, dry frying pan and place 1 crepe in it. Spread over a thin layer of crème fraiche and sprinkle with gruyere and the ham. Leave to warm for a couple of minutes before folding in half and serving. Repeat and serve with a dollop of chutney if you wish!
