Slow Cooker Beef Stew

Tuck into juicy, tender beef, hearty vegetables and a rich sauce with our easy slow cooker beef stew.
We’ve added smoked paprika for an extra kick of flavour, but feel free to customise with your favourite vegetables if desired. Prepare before work, leave to cook throughout the day and return home to a steaming bowl of stew – it'll be an instant hit with the family!
What you'll need...
- 2 celery sticks, finely chopped
- 1 white onion, finely chopped
- 2 tbsp rapeseed oil
- 4 carrots, chopped into chunks
- Handful thyme
- 2 bay leaves
- 2 tbsp tomato puree
- 2 ½ tbsp Worcestershire sauce
- 2 beef stock cubes, or stock pots
- 900g beef for braising, diced into chunks
- 1 tsp paprika, optional
- Small bunch parsley, roughly chopped
- Mashed potato, to serve
Method
Fry the onion and celery in oil over a low heat until they start to soften. Add the carrots, thyme, bay leaves and fry for 2 minutes. Stir in the tomato puree, Worcestershire sauce and 600ml boiling water before tipping it all into your slow cooker. Crumble over the stock cubes, add paprika (optional) and stir for even distribution. Season with pepper (avoid salt at this stage).
Fry the beef chunks in the remaining oil in batches until the pieces are well-browned. Once done, tip the beef into the slow cooker and cook on low heat for 8-10 hours or high heat for 4 hours.
Once cooked, stir in parsley and season with salt and pepper to taste. Serve with creamy, buttery mash and a side of your favourite steamed green vegetables like broccoli.
ProTip: Feel free to experiment with your favourite veggies. Potatoes, root veggies, peas and more all taste fantastic when added to this recipe!
