Slow Cooker Chilli Con Carne

With its smoky, rich taste and tender mince, this will soon become your go-to slow cooker chilli recipe.
We’ve combined beans, mince, chipotle and Marmite to create this rich and tangy slow cooker chilli con carne. A perfect meal to prepare for busy weeknights and to feed a family, this dish is full of comfort and spice that’ll warm you through.
What you'll need...
- 500g beef mince (or a vegetarian alternative if desired)
- 1 white onion, finely chopped
- 1 red pepper, sliced
- 1 celery stick, finely chopped
- 3 garlic cloves, grated
- 3 tbsp olive oil
- 2 tsp ground cumin
- 1 ½ tsp smoked paprika
- 1 tsp dried oregano
- 2 tbsp chipotle chilli paste
- 400g can chopped tomatoes
- 3 tbsp tomato puree
- 400ml beef or vegetable stock
- 800g black beans, drained from the can
- 2 tbsp Marmite
- Tortilla chips, to serve
- Cooked rice, to serve
- Sour cream, to serve
- Sliced jalapenos from a jar, drained, optional
Method
Turn on the slow cooker and set to low.
Heat 1 tbsp of olive oil in a non-stick pan over a high heat and fry the mince for 10 minutes or until evenly browned. Add to the slow cooker.
Add the remaining oil to the pan and fry the onion, pepper and celery until softened. Add the garlic, paprika and cumin and fry for 1 minute. Tip into the slow cooker and mix into the mince.
Stir in the chipotle paste, tomatoes, tomato puree, oregano and stock. Mix well to combine. Cover and cook on low for 6-8 hours.
Stir in the beans and Marmite and leave to cook for 30 minutes.
Serve with a bowl of rice, dollop of sour cream and handful of tortilla chips. Top with jalapenos if you wish. Season with salt and pepper to taste.
