Combining sweet and salty, our slow cooker gammon in coke is an easy yet delicious meal to enjoy this festive season.

Add all the ingredients to the slow cooker and crisp up in the oven. Our slow cooker gammon is hassle-free and a great alternative for roast dinner with all the trimmings. You can also enjoy this gammon cold.

What you'll need...

For the gammon
  • 1kg gammon joint
  • 1.5l cola (enough to cover the joint), not diet
  • 1 large onion, peeled and quartered
  • 1 carrot, peeled and chopped
  • 1 stick celery, chopped
  • Handful peppercorns
  • 2 bay leaves
  • 1 cinnamon stick
For the glaze
  • 100ml maple syrup
  • 1 tbsp brown sugar
  • 1 tsp wholegrain mustard
  • 2 tbsp red wine vinegar
  • Pinch of five-spice

Method

  1. Set your slow cooker to high. Place your gammon joint in the slow cooker and pour over the cola. Add the carrot, onion, celery, cinnamon stick, peppercorns and bay leaves. 

  2. Cook for 4 hours or until the gammon is tender. Add boiling water if needed to keep the gammon covered. 

  3. Once cooked, pour the liquid away and allow the gammon to cool while heating up the oven (190C / 170C fan / gas 5). Cut away any skin, leaving behind a layer of fat. Place the gammon into a roasting tin. Score the fat with a crisscross pattern to help with the crisping. 

  1. Mix the ingredients needed for the maple glaze in a jug and pour half over the fatty part of the gammon joint. Roast for 15 minutes, then pour over the rest. Roast for a further 25-30 minutes. 

  2. Once cooked, remove from the oven and allow to rest for 5-10 minutes. If there’s left over glaze, add a spoonful over the top for extra flavour and moisture. Carve and serve.
