Use up leftover ripe bananas to make this delicious vegan banana bread. Toast and enjoy with peanut butter for a quick breakfast.

We’ve created this easy, yet delicious vegan banana bread that’ll pair perfectly with a cuppa. You can adapt the recipe, adding vegan chocolate chips, walnuts or blueberries if you wish.

What you'll need...

  • 3 large ripe bananas
  • 75ml vegetable or sunflower oil
  • 100g brown sugar
  • 225g plain flour
  • 3 tsp baking powder
  • 3 tsp cinnamon

Method

  1. Preheat the oven to 200C / 180C / gas 6.  

  2. Mash the 3 peeled bananas with a fork and mix with the oil and brown sugar. 

  3. Add the plain flour, baking powder, cinnamon and combine. If you’re adding blueberries, nuts or chocolate chips, add now. 

  4. Oil and line a loaf tin and pour the mixture in. Bake for 20 minutes. Check and cover with foil if the top starts to brown too much. Bake for a further 20 minutes, or until a skewer comes out clean.
