Our refreshing watermelon and feta salad is meant for warm summer days and perfect for BBQs, alfresco lunches and scenic picnics.

Easy to whip up but incredibly delicious, this salad is sure to go down a treat. Serve alongside burgers, griddled chicken, barbecued aubergine - or anything you fancy, really! Feel free to add your favourite ingredients. Avocado and red onion make tasty additions.

What you'll need...

  • 1 large ripe watermelon
  • 150g feta, diced or crumbled
  • Handful of fresh mint leaves, torn or sliced
For the dressing
  • 75ml light olive oil
  • 75ml red wine vinegar
  • 50ml maple syrup
  • ½ tsp dried chilli flakes (optional)
  • Squeeze of lemon
  • Salt and pepper to taste

Method

  1. Peel and dice the watermelon and add to a large bowl along with the mint. Add the dressing to a clean jam jar and shake to combine. 

  2. Pour the dressing over the watermelon and gently toss to coat. Add the feta and gently fold it into the watermelon to avoid breaking it up too much. Serve and enjoy
